Ingredients:
1 pound potatoes
3 egg yolks
1/4 pound Paladin Blue Cheese
butter
Directions:
Boil the potatoes. When cooked, drain and mash while still hot. In a bowl, mix the mashed potatoes, egg yolks and Paladin Blue Cheese with a wooden spatula. Once blended, make the resulting mixture into a number of small balls the size of an egg; then flatten them with the blade of a knife and, with the back of the knife, cut into them a series of diamond-shaped lines. Place them on a lightly buttered baking sheet and glaze by brushing them with beaten egg. Bake at 400 degrees Fahrenheit for ten minutes.
