3/4 pound of prawns
1/4 pound Paladin Blue Cheese
1/2 cup heavy cream
1 ounce butter
1 egg yolk
6 slices of sandwich bread
1 small glass of sherry
Wash and peel prawns.
Place in a frying-pan with butter and cook until golden, all the while spraying with sherry.
Allow the sherry to evaporate.
Mix the cream and the Paladin Blue Cheese together and add the mixture to the prawns.
Remove from heat and bind the mixture with the egg yolk.
Remove the crusts from the sandwich bread and cut the slices diagonally in 4 parts each.
Toast them lightly then place in a lightly buttered pan.
Cover each piece with the prawns and their sauce.
Place in oven and cook for a few minutes.
