1/2 lb plain flour, sifted with 2 pinches of salt and 1 of pepper
1 teaspoon sugar
1/2 oz yeast
4 fl oz milk
2 oz butter
4 oz Comté, shredded
Place flour in a warm bowl and make a well in the center.
Cream sugar with yeast and place in the well of flour.
milk with the butter in a pan.
When the butter is melted and the
mixture only lukewarm, stir liquid into the flour with the eggs.
Beat well into a froth.
Work well to form a soft dough, cover and
leave to stand 1 hour.
Work in the Comté, reserving 1
Set oven to 400 degrees F. Turn mixture into a
greased bread tin.
Leave to prove and sprinkle with rest of
Bake in oven for 45-50 minutes until golden brown.
Serve hot or cold.
