8oz Leicester cheese, cubed
2 chicory heads, sliced
5oz natural yogurt
2 sweet apples, peeled, cored and chopped
2 oranges, peeled and segmented grated rind of ½ orange
2 teaspoons Acacia honey
2 teaspoons lemon juice
1 teaspoon French mustard
1. Mix yogurt, honey, lemon juice, mustard and orange rind together for dressing.
2. Put cheese, chicory, apples and oranges in a bowl. Add dressing and mix well.
3. Sprinkle with chopped parsley and serve.
Leeks may be used in place of chicory.
Cooking instructions for Leeks:
Leeks must be sliced and blanched in boiling water for 5 minutes. Drain, cool and follow the same directions.
