1 cup extra virgin olive oil
1 clove of finely chopped garlic
12 oz fresh salmon (no skin and no bones)
1/2 finely chopped medium onion
2 medium tomatoes chopped
1 cup dry white wine
1 laurel leaf (not vital)
5 basil leaves finely chopped
salt to taste
Pour the oil in a frying pan, add salmon, the onion, the garlic and the laurel and let them brown lightly on a medium-low heat.
Add the white wine, the chopped fresh tomato and let it cook for a few minutes
Cook the pasta, drain it and mix it into the sauce. Add the finely chopped basil and serve.
