1 ripe tomato, diced
1 cucumber, peeled and sliced
2 red onions in vinegar, sliced
1/2 red bell pepper, diced
1/4 cup nicoise or kalamata olives
4 oz. feta cheese, cut into 1/2-inch cubes
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1 tablepsoon chopped fresh oregano, or 1 teaspoon dried
salt and pepper to taste
1. In a medium bowl, combine tomato, cucumber, onions, bell pepper, and olives. Toss.
2. Gently toss in feta cheese, vinegar, oil, oregano, salt and pepper.
3. Serve chilled.
