1 tablespoon olive oil
1 clove garlic, minced
1 pound fresh spinach, washed with stems removed
juice of one lemon
¼ teaspoon aglio e peperoncino
salt and pepper to taste
1. In a large sauté pan, heat the olive oil over medium heat. Add garlic and cook for one minute.
2. Add spinach to pan. Sprinkle lemon juice and aglio e peperoncino over. Cover and steam until just wilted, about 5 minutes.
3. Toss cook spinach with salt and pepper and serve.
