2 1/2 tbsp butter
1/2 tsp salt
8 oz Caerphilly or other Sharp Cheese
2 1/4 tbsp flour
2/3 cup milk
Traditional flavored Grissini (bread sticks)
Using a double boiler, melt butter over low/medium heat.
Combine flour, salt, and pepper, combining well.
Add flour mixture to melted butter and stir until smooth.
Pour in milk slowly and continue to stir constantly.
Add shredded Caerphilly, stirring until completely melted.
Serve immediately along with Grissini for dipping.
