Line pan with foil, pre-heat oven to 325. Drizzle oil over chicken, sprinkle with salt, and bake for 15 minutes. Remove from oven.
Place a slice of proscuitto and a couple of slices of Piacentinu atop each breast, and return to oven for 5 minutes (oven times may vary) until cheese is completely melted.
Serve immediatly with risotto or a simple salad.
