Ingredients:
100 g. of Monte Veronese cheese
4 zucchinis
1 egg
Chopped parsley
Salt & Pepper
Directions:
Boil Zucchini in salted water for 3 minutes. Cut them lengthwise and take out the pulp. In a mixing bowl mix the removed pulp with the egg, adding the cheese and parsley, add salt and pepper to taste. Put this filling into the zucchinis and place them in a greased Pyrex baking dish. Cook in the oven at approximately 355 degrees for about 15 minutes.
