4 trout fillets
4 green onions, finely chopped
60z Istara Ossau-Iraty cheese,(or agour Ossau-iraty, or Petit Basque) grated
grated rind of one lemon
2 tbsp crème fraîche
Sea salt with seaweed
Freshly ground green peppercorns
1/4 cup fennel seeds
Place the trout fillets in agreased oven-proof dish and season with salt, pepper and fennel. Sprinkle over the green onions, grated Ossau-Iraty cheese and lemon zest.
2 Spoon over the crème fraîche and place in a pre-heated oven at 350, until the fish begins to firm up.
3 Serve immediatly with green beans & toasted almonds, and roasted garlic mashers.
