1/2 cup white wine
4 oz shaved Boschetto al Tartufo (or Caciotta Dei Boschi)
1/4 cup creme fraiche
1 tbsp poppy seeds
1 tbsp fine Balsamic Vinegar of Modena
pinch of fresh thyme
Salt and pepper to taste
1. Over medium heat warm wine, cheese and poppy seeds.
2. When reduced, slowly add in other ingredients, except creme freche, which should be incorporated at the end when ready to serve.
Serve over grilled chicken, pork or lamb.
