2 lbs. chicken tenders
1/8 cup lemon juice
1/2 cup Turkish Extra Virgin Olive Oil
1 T. blend of thyme, oregano and rosemary
1/4 cup Ayvalik Green Olives
Fresh ground pepper & salt to taste
Optional - 3 oz. Sao Jorge cheese, grated
2 oz. toasted pine nuts or Nurlu Almonds
In a roasting pan, place chicken in one layer to fit. Mix lemon juice, olive oil, and blend of herbs together. Pour olive oil mixture over chicken, place chicken in refrigerator, and marinate for at least one hour. Pre-heat oven to 400 degrees F. Place chicken in oven and cook for 25 minutes. Add green olives to chicken, distributing evenly, and cook and additional 10 minutes.
Add grated cheese and toasted pine nuts or almonds after plating.
