Ingredients:
For the crust -
8oz crushed almond biscotti or gingered cookies
2 oz brown sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
4 Oz melted butter
For the filling -
15 oz chevre
3 large eggs
2 tbsp fresh lemon juice
2 tbsp grated lemon peel
3oz caster sugar
3oz sliced almonds
Directions:
For the crust - In a food processor, blend the biscuits, sugar and spices into a fine crumb. Put into a bowl and thoroughly mix in the melted butter. Press this mixture firmly and evenly into the bottom and sides of a large glass pie dish with hands.
For the filling - Blend all the ingredients together in a food processor until smooth and creamy. Pour into the crust-lined dish.
Bake at 350 for about 25 minutes, adding almonds after 15 minutes. Allow to cool before serving.
