2 lbs potatoes
12oz Kasseri or Kefalotyri
Pinch of Oregano and Thyme
salt and pepper
1)Boil the potatoes, peel them and put through a blender.
2)Mix the cheese and eggs with the potatoes, seasoning with herbs and salt and pepper.
3)Shape the mixture into croquettes and lightly flour them.
4)Heat the oil in a frying pan and fry the croquettes until golden brown.
5)Serve with lamb or grilled fish
