This great recipe comes from our friends at Whitestone Cheese!
2 cloves chopped garlic.
1 onion chopped finely.
1 small bunch spinach chopped.
4 rashers bacon chopped.(great with Duck Bacon as well!)
6 ounces windsor blue.
salt and black pepper to taste.
2 Tbsp olive oil
Saute the onion , garlic and bacon in the olive oil until onion is soft; add spinach, blue cheese, cream and saute until all are combined.
Add salt and pepper to taste. Set aside and cook pasta in boiling water until al dente. Reheat sauce and combine with with drained pasta.
