We especially like a good Tilsit or the Havarti with Caraway for this recipe, or alternatively you could use Leyden or Nokkelost, both also flavored with Caraway - serve these with a light spinach or artichoke dip.
1 1/2 cup all-purpose flour
1/2 cup butter, softened
1/4 tsp salt
12 oz Havarti Caraway, shredded
1. Preheat oven to 425.
2. In large bowl, with hand, knead all ingredients
gently until well blended.
3. Shape dough into 1/2-inch balls. On ungreased cookie sheet, place three dough balls in a cluster.
4. With fingers, flatten cluster to 1/4-inch thickness. Repeat with remaining balls, placing clusters about 2 inches apart. Bake 10 to 12 minutes until lightly browned.
5. Carefully remove cheese crisps and transfer to wire racks to allow to cool.
