Ingredients:
FOR THE BATTER -
1 cup flour
1 tsp baking powder
1 1/2 tsp sugar
1/4 tsp salt
1/4 cup butter, cubed
1/3 cup milk
2 eggs
FOR THE FILLING -
1.5 lb drained peaches
1 1/2 cup Prastost cheese shredded, or for a fun twist try our VODCheese with Ginberry
1/3 cup sugar
1/3 cup half-and-half
1 tbsp flour
1 tbsp lemon juice
1/2 tsp vanilla
1/4 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp salt
4 tbsp heavy cream
1 egg yolk
Directions:
1. Drizzle sliced peaches with lemon juice. Sift flour with sugar, baking powder and salt. In mixing bowl using fork, beat eggs and milk and lemon peel. Add flour mixture and melted butter, gently mixing until smooth, approximately 1 minute
2. Butter 9 inch pan. Pour batter into pan, spread evenly over bottom. Arrange Peaches and cheese. Sprinkle evenly with half of the sugar, nutmeg cinnamon and ginger mixture.
3. Bake for approx. 20 minutes and remove from oven.
4. Whisk together egg yolk with cream. Pour over kuchen and return to oven for an additional 10 minutes.
