Ingredients:
4 oz Roomkase or Koopsen Kaas
1 lb smoked chicken breast
Handful of black cherries
1 fresh peach
½ cup crème fraîche or sour cream
2 tablespoons sugar
½ teaspoon Dijon mustard
1 teaspoon vinegar
A few dashes of Tabasco
Pinch of salt
2 teaspoons mild curry powder
Sprig of lemon balm (garnishing)
French bread or pan-fried potatoes
Directions:
Cut the smoked chicken breast into strips. Wash the cherries, halve them and
remove the pits. Pour boiling water over the peaches, remove the skins and pits,
and cut them into wedges. Cut the Koopsen Kaas into small cubes and combine with the
crème fraîche or sour cream, sugar, mustard, vinegar, Tabasco and curry powder to
make the sauce. Stir in the chicken, cherries and peaches. Serve on attractive plates
garnished with lemon balm with a side of French bread or pan-fried potatoes.
