4 medium tomatoes cored and cut into 1-inch wedges
1 cup pitted Kalamata olives
2 medium cucumbers, unpeeled, cut into 1/2-inch rounds
1 medium red onion, thinly sliced
1 tablespoon capers, rinsed and drained
1 tablespoon fresh oregano leaves
1 cup shredded romaine lettuce
1 cup diced red and yellow bell peppers, seeds and membranes removed
1/4 cup extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon red wine vinegar
6 ounces feta cheese,cubed
Sea salt and freshly ground pepper
Directions:
1. In a large bowl toss together the tomatoes, olives,cucumber,onion,capers,oregano,lettuce,and peppers. Drizzle the salad with olive oil, lemon juice, and vinegar, and toss until all ingredients are evenly coated. Sprinkle with feta cheese and season with salt and pepper to taste
