4 tablespoons vegetable oil
1 10-oz block paneer*, cubed
1 cup green beans, cut into 1-inch pieces
1 15-oz container Maya Kaimal Coconut Curry
¼ cup coconut, dried and toasted (optional)
1. In a medium pot, heat vegetable oil over medium heat. Add paneer and fry on all sides until lightly brown.
2. Add green beans and Coconut Curry sauce. Cover and turn heat to low. Allow to simmer until green beans are tender, but not overcooked. Add water if mixture gets too thick.
3. If desired, finish with toasted coconut. Serve warm over rice or as a side dish.
*A hard, Indian cow’s milk cheese sold at Indian grocery stores and some specialty and natural foods retailers.
