Ingredients:
4 cups arugula
1 cup cherry tomatoes, halved
1/2 cup pine nuts
1/2 cup grated Parmesan cheese
Chili Lime Salad Dressing
Directions:
1. Toast the pine nuts on a pan over low heat, stirring constantly until slightly browned.
2. In a large bowl, mix together arugula, cherry tomates and toasted pine nuts.
3. Add dressing and toss salad.
4. Sprinkle over with grated Parmesan cheese.
Serves 4-6
