½ cup Olive Oil
¼ cup Porto Vinegar
2 tbls chopped fresh mint, stemmed
Kosher salt and freshly ground pepper
1 6-ounce package of arugula, spinach, or mezclun
½ cup crumbled feta cheese
Whisk the first four ingredients in a small bowl to blend. Wash, spin, and drain arugula leaves. Place in salad bowl and toss with dressing. Sprinkle with feta cheese.
