Ingredients:
1.5 oz Vegetable Oil
6 oz Fine Chopped Onions
16 oz Chicken Breast cut in small Cubes
10 oz Fine Chopped Carrots
12 oz Red Bell Peppers finely chopped
12 oz Celery finely chopped
16 oz Cannellini Beans
16 oz Chicken Broth
1/3 oz Dry Oregano
½ oz Ground Cumin
Salt
2 oz Green Chilies Chopped
1.5 oz Pesto alla Genovese
Directions:
Heat oil in a large pot over medium-high heat. Add onions and chicken, sauté 5 minutes. Add carrots, bell peppers and celery, sauté 4 minutes. Add chilies and the herbs and spices, beans and broth bring to a boil. Cover, reduce heat and simmer 25 minutes. Stir in Pesto alla Genovese.
Serve Hot or Lukewarm
