Ingredients:
• 4 boned chicken breasts
• 1 tablespoon vegetable oil
• 75g butter
• 1 packet of filo pastry
• 100g Patchwork Pâtés or something spicy try the Welsh Dragon’s Pâté
• 50g toasted sesame seeds
Directions:
Heat the oil with 25g of the butter. Brown the chicken breasts on both sides. Make a pocket in the chicken breasts and fill each with 25g of the pâté. Melt the butter. Cut the filo pastry into 6 inch squares. Wrap each breast in two sheets of filo pastry, brush the edges with butter, draw up the edges and pinch together at the top. Add the sesame seeds to the remaining melted butter and brush over the top of the parcels. Bake in a pre-heated oven at 180oC/350oF/Gas mark4 for 20 minutes. Enjoy!
You can also try this dish replacing the filo pastry with Prosciutto di Parma or Serrano Ham.
