1/4 cup grits
3 1/2 cups cold water
1/4 teaspoon salt
pinch black pepper
4 tablespoons coarsely grated Cheddar
butter, salt and pepper as desired for serving
Stir the grits into the cold water with the salt and pepper.
Bring to a boil, then cover and cook over low heat for 15 minutes, stirring occasionally, until the grits have thickened.
Remove from heat and stir in cheese. Cover and let sit for a couple of minutes before serving with butter, salt and pepper to taste
