Ingredients:
1 leek, finely sliced
1 garlic clove, crushed
butter, for sweating
140g/5oz cheddar cheese, grated
140g/5oz fresh white breadcrumbs
2 tbsp finely chopped parsley
½ tsp English mustard powder
1 egg, beaten
oil, for frying
salt and freshly ground black pepper
Directions:
1. Sweat the leeks in the butter until soft. Add the garlic and cook for another 5 minutes
2. Mix all the ingredients together in a bowl. Check for seasoning.
3. Shape into balls, cover with cling film and chill for 30 minutes.
4. Preheat the oil in a frying pan and cook the balls until browned and serve with a green salad
