2 tbsp butter
2 tbsp flour
1 1/2 tsp chopped fresh thyme
1 tsp garlic, minced
2 cups whole milk
8 oz mild blue cheese, such as Gorgonzola Dolce or Danish Blue
8 oz robustly flavored blue cheese, such as Stilton, Rogue Creamery Smokey Blue, or Roquefort
1/4 dry white wine
Freshly ground black pepper
Melt the butter in saucepan, add flour and cook until it just beginning to brown. Immediately add herbs and garlic. Cook for 1-2 minutes. Add the wine, then milk and raise the heat to medium. Simmer for 3-5 minutes. Add the cheese and stir until smooth, season to taste with salt and pepper. Pour into a fondue pot or serving dish.
Accompany with bread and vegetables.
