-126 g fresh cheese (i.e. ricotta, robiola, crème fraiche)
-80 g aged Parmigiano-Reggiano, freshly grated
-Salt and pepper to taste
-1 tablespoon unsweetened whipping cream

Whisk the fresh cheese until it reaches a soft and frothy consistency. Add the Parmigiano-Reggiano, salt, pepper, and whipped cream. Finally, add the nutmeg and chives to taste. (The chives can be replaced with other herbs and spices such as green peppercorns, paprika, or a mix of minced basil, garlic, and thyme.)
The cheese mixture should be creamy and can be used as a spread on bread or as a filling for vol-au-vents or savory cream puffs.
