-4 pork tenderloins (120 to 130 g each\-4 thin slices of prosciutto
-1 egg, lightly beaten
-80 g Parmigiano-Reggiano, grated
Preheat oven to 400F. Wrap each tenderloin with a slice of prosciutto, roll in the egg and then in the grated Parmigiano-Reggiano. Place the tenderloins in a buttered baking dish and dot with more butter. Bake for no more than 10 minutes. Serve immediately.
