3.5 grated mature Pecorino Toscano
Clean and strip the cardoons, cut into small pieces. Soak the cardoons for about one hour in water to which the juice of a lemon has been added, the boil. Grease a baking tin and arrange a layer of cardoons. Sprinkle with grated Pecorino Toscano and drizzle with melted butter. Arrange a second layer of cardoons, Pecorino Toscano and butter, repeat until all the ingredients have been used up. Bake in oven at 356F for 30 minutes.
