Recipes Forum - White Onion Soup w/ Pecorino Toscano & Toasted Tuscan Bread


Ingredients:

7 oz Pecorino Toscano
1.5 oz mature Pecorino Toscano
14 oz white onions
6.7 oz virgin olive oil
3 oz flour
8 slices of bread
1 meat cube

Directions:

Clean the onion and cut into thin slices and cook in oil over a slow heat. When the onions are browned, add the flour and mix with a wooden spoon to a creamy consistency. Cook for 5 minutes, then add hot water to cover the onions, salt, pepper, and a meat cube. Leave to cook for a further 10 minutes. Place soft Pecorino Toscano on the toasted side of the bread (th untoasted side should be in contact with the baking tin) then bake in the oven at 392F until the cheese melts. Pour the soup into a tureen and cover with the oven-baked slices of bread. Sprinkle freely with mature Pecorino Toscano flakes and serve very hot.
