1 C Freekeh (green wheat berries)
1 can chick peas, drained and well rinsed
1 medium tomato or a handful grape tomatoes
Small bunch fresh basil, chopped
1 C cucumber cut into bite sized pieces
2 tsp extra virgin olive oil
2 tsp white wine
pinch sea salt
Cook Freekeh in 3 cups water for 60-75 minutes until tender. Drain and chill.
Combine dressing ingredients in a small bowl and whisk together. Chop all veggies to small bite sized pieces and place in a bowl with the freekeh wheat berries and basil and then mix in the dressing. Then store in the fridge until ready to eat, or serve right away.
