2 1/4 c. All Purpose flour
3/4 tsp. Kosher salt
1/2 tsp. baking soda
1 tsp. baking powder
4 1/2 Tbsp. chilled unsalted butter
1 c. buttermilk
4 oz shredded Hoop Cheese
Preheat oven to 450 degrees F and spray a baking sheet with nonstick spray.
Mix the dry ingredients in a large mixing bowl. Gently work in butter with fingertips or a pastry blender.
Make a well in the center of the dry mixture and add the buttermilk. Gently scrape the sides of the bowl and fold the mixture until just combined. Fold in shredded cheese, then roll dough into a 1/2" sheet. Cut into square biscuits.
Bake for 15 minutes or until golden brown.
Slice and serve with slices of hoop cheese.
