Ingredients:
1 Boneless Leg of Lamb
3 Cloves Garlic, Minced
1 Tbsp Fresh Thyme (or 1 tsp dried)
3 Tbsp Olive Oil
8 oz olives, stoned and halved. (A mix of colors is best for presentation)
4 oz favorite blue cheese, crumbled
salt and freshly ground pepper, to taste

Directions:
1.) Preheat oven to 425°F.
2) Unroll boned leg of lamb on cutting board. Season with salt and pepper, remembering that the olives and blue cheese will add their own salt to the recipe.
3) Mix together cheese, olives, oil, herbs, and garlic. Roll up lamb tightly and tie snugly at 1-inch intervals with kitchen twine.
4) Roast for 15 minutes. Then turn oven down to 325 F for 1 – 1 ½ hours for medium rare or until cooked to your liking. Transfer to a large board and let stand for 10 minutes before slicing.
Scatter a little fresh blue cheese over top for presentation.
