1/4 cup minced red onion
3 tbsp. white wine vinegar,
4 tbsp. chopped fresh tarragon,
1 tsp. grainy mustard, and
7 tbsp. Seitenbacher Unrefined Oil (your favorite variety)
Whisk oil and vinegar together, then add mustard and stir to combine. Then fold in onions and herbs. Season with salt and pepper.
