Ingredients:
2 sticks of butter, softened
1 cup light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons of Nielsen-Massey Madagascar Bourbon Pure Vanilla
1 1/2 cup all-purpose flour, sifted
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups uncooked oatmeal (not fast cooking oatmeal, use real oatmeal)
1/2 cup golden raisins
1/2 chopped pecans (optional)
3/4 cups Butterscotch Chips or Chocolate Chips
Directions:
Pre-heat oven to 350 degrees. In a mix master, cream together butter and sugars. Add eggs, followed by the rest of the ingredients. Make small raw dough balls using a teaspoon or melon ball scoop. Place a few inches apart on a parchment paper lined cookie sheet. Bake on the middle rack of the oven for approximately 14 minutes until golden. Remove from oven and allow to cool for a minute or two before moving onto a wire rack to completely cool.
