To create the perfect caviar canape, take a slightly warm blini and top with a teaspoon of creme fraiche, spreading it just shy of the blini's edge. Then top with a teaspoon of caviar, making sure to use a pearl, glass, or plastic spoon. Metal spoons will react with the delicate eggs and create an off flavor in the caviar. To garnish, lay a single chive or chevril leaf on top of the canape. Serve with a shot of vodka garnished with a twist of lemon.
