2 small heads endive
8 oz Nut Rebel Cheese, shredded
4 oz walnuts
1 garlic clove
1/4 cup breadcrumbs
1 tablespoon walnut oil
Peel off the large outer leaves of the endives and lay on a baking sheet.
Grind the walnuts and garlic clove in a food processor. Add breadcrumbs and walnut oil. Stir to combine into a crumbly paste.
Fill the endive leaves evenly with the shredded cheese, then top with a small crust of breadcrumb and wanut mixture.
Broil on High for 1-2 minutes, until cheese melts and the crumb topping becomes brown and crispy. Add a few grinds of black pepper to taste.
