4 oz Tickler with Red Onion, grated
2 tablespoons butter (at room temp)
4 Tablespoons favorite chutney
4 slices sourdough bread
Heat a cast iron skillet or other heavy pan over medium heat. Butter one side of each bread, then fill the unbuttered side with grated tickler cheddar. Spoon two tablespoons of chutney into the center of each slice and spread to the edges. Press bread together to form two sandwiches.
Put into hot skillet and place another heavy skillet on top to smush bread down against the pan. Cook 3-4 minutes, until cheese begins to dribble down the side. Flip bread and cook another 2-3 minutes until bread is nicely browned and cheeese is bubbling.
Serve at once.
