2 cups fresh or frozen black currants or any other berry
1/2 cup Camelina oil
1/2 cup apple cider vinegar
1/4 cup honey
2 cloves garlic
1 handful fresh basil, chopped, or 1 Tbsp dried basil
Salt and freshly ground pepper to taste
Mince the garlic and place it, it along with the rest of the ingredients, in a blender or food
processor. Purée 'til the mixture is somewhat smooth-- some berry lumps are beautifully acceptable!
This freezes well and can also be used as a marinade for meats or tofu before grilling. Enjoy!
