(4 people) 500 gr. of fresh salmon,350 gr. o rice, 3 dl. of cream, 150 gr. of Manchego cheese, 1 bay leaf, salt and pepper to taste.
Remove the bones and skin fromthe salmon and cut into fillets. Separately, in a large saucepan, put the water to a boil with a bay leaf, a squirt of olive oil and a pinch of salt. When it starts to boil, pour in the rice and let it cook until the grains are "al dente". Drain it and put it to one side. In a separate saucepan, heat the cream until it has reduced by 1/3 of its volume. Arrange the rice on a dish, add the cheese, and season with salt and pepper. Cover the preparation with the salmon fillets and sprinkle with grated cheese. Grill.
