Makes 10 servings (20 cups)
1 Chicken Breast
1 cup Jade Blend Rice (I buy it from the Bulk Barn)
2 cups water or chicken broth (or a mixture of the two)
3/4 cup soup mix (any flavour you desire, I use pumpkin)
32 fl. oz. Diced Tomatoes
2/3 cup packs frozen Spinach
Lightly oil the crock pot
Line the bottom of the crock pot with thawed chicken breasts
pour the uncooked rice over the chicken
Mix the water or broth with the soup mix and pour over the chicken and rice
Turn crock pot on low and cook, covered for 4 - 6 hours.
Once the rice is cooked and the crock pot is still hot, put in the two packages frozen spinach and cover. When the spinach is thawed and warm turn off the crock pot and it is ready to serve.
