One of the rarest, most sought after Dutch specially-cured cheeses has been made in the southern provinces of the Netherlands for over 800 years - Extra Aged Farmer Gouda. Easy to distinguish, it is the dairy world's equivalent of a Rembrandt or Van Gogh. This edible opus magnum has been matured for eighteen months, allowing its body to develop a muted caramel color, matched by an intense flavor with a sweet finish. Extra Aged Gouda can be grated or chunked.

Our Extra Aged Gouda is aged 18 months and is produced by CONO Kaasmakers under the Beemster brand. CONO is located in Northern Holland, famous for its rich milk and fertile grazing land.

Along with their conquering armies, the Romans brought their cheese making expertise to England in the first century AD. But it was not until the sixteenth century when the cheese we know today as cheddar was so named. With such a long history, it's no surprise that cheddar is one of the world's favorite foods. So popular in fact, that almost every cheese-producing nation makes its own version. This assortment contains excellent examples from three continents:
  • Denhay Mature English Cheddar: Denhay Cheddar is carefully matured and monitored until it is 11 months old when it is sold as premium West Country Farmhouse Cheddar. (8 oz.)
  • Grafton Classic Reserve Cheddar: Grafton Classic Cheddar is an outstanding mature cheddar cheese selected for its pronounced flavor and smooth finish. This two year aged cheese is excellent when accompanied with dried fruits and nuts, crusty breads, and big wines. (8 oz.)
  • Great Ocean Road Cheddar: This sharp white cheddar hails from Australia, where it is made from pure milk taken from cows that graze on lush pastures swept by winds from the Southern Ocean. (8 oz.)
  • Red Leaf Cheddar: This entrant from North America has a firm texture and a sweet, honeyed flavor. Best enjoyed with ale and fruit, this cheddar is aged for over 12 months. (8 oz.)

After a long wait, we finally bring you chorizo cured in Spain. You will immediately notice the difference between this chorizo and domestic imitations. Palacios, a company based in Logroño, the capital of the La Rioja region, earned permission from the U.S. authorities to export chorizo to the U.S. in 1997, but it wasn't until 2001 that it started entering the country in any significant quantity. Palacios Chorizo does not contain any preservatives or artificial colors; just pork sausage cured with paprika and garlic. They use a traditional process, using a secret 30-year-old family recipe. Its meat and natural ingredients are carefully selected, creating a smoky, earthy, sweet and tangy sausage.

Finally, Americans can enjoy one of the true culinary treasures of Spain! Chorizo is excellent in stews, potages, omelets, paellas, or served as part of a tapas. It makes a statement, with a flavor so powerful that it does not influence a dish subtly. Available in regular or hot. Varieties sold separately.

Choosing from over 850 of our cheeses can be a daunting task, even for the most accomplished cheese connoisseur. While we all have our traditional favorites, there is something special about discovering a great new cheese. And, the best way to experience a new cheese is to try it. For those of you looking to expand your cheese repertoire, we have crafted a four cheese sampler from four continents of some little-known gems to serve at your next get-together. This assortment includes:
  • Volendam (Europe): If you are a gouda lover, then Volendam is a must have! Inspired by the scenic Dutch fishing village of the same name, Volendam has a butterfat content of 55%. (8 oz.)
  • Hard Grana Provolone (South America): Originally from Lombardia, Italy, this cheese was brought by Italian immigrants to Argentina. The cheese is recognized by its particular pear shape. During the aging stage, the cheese is hung (wrap and secure with a rope). This hard Provolone cheese develops a sharp, piquant flavor with age. (8 oz)
  • Great Ocean Road Cheddar (Australia): This sharp white cheddar hails from Australia, where it joins Stokes Point and Mainland Cheddar as a new favorite from down under. (8 oz.)
  • Atalanta Blue (North America): Atalanta is the Greek goddess of hunt, travel, and adventure. The name Atalanta is thus appropriate for this new blue cheese from Wisconsin. It's a bold cheese that took several years to perfect. Enjoy it crumbled over salads, stirred into sauces, or on crackers. (8 oz.) Please note that any item temporarily out of stock will be substituted with a similar item of equal or greater value.

This sampler features four cheeses that are typical of four distinct regions of Italy:
  • Provolone Piccante - The piccante (sharp) version of this classic Italian cheese is more complex and great on sandwiches or chunked. (8 oz.)
  • Grana Padano Stravecchio - The original hard Italian cheese, Grana Padano is a firm, dry, fruity cheese from the Po Valley of Northern Italy. Stravecchio is aged for an optimal 20 months. Grate it over pasta, vegetables or soup, or serve it as a table cheese drizzled with extra virgin olive oil. (8 oz.)
  • Mountain Gorgonzola - Italy's famous blue cheese comes from Lombardy. Made from cow's milk taken from local herds that graze on beautiful rolling pastures, no Italian Cheese Assortment would be complete without a cut of authentic Gorgonzola. (8 oz.)
  • Pecorino Toscano - This soft, sheep's milk cheese is made in the hills of Tuscany. It is young, sweet and springy. We find that this combination well represents the wide variety of flavors and textures found in Italian cheeses. (8 oz.)
  • Please note that any item temporarily out of stock will be substituted with a similar item of equal value.

The Italians are horrified by our usage of this, the world's most famous hard cheese. Here in the States, it is thought of as purely a grating cheese. The rest of the world savours Parmigiano Reggiano as a delicious, full-flavored eating cheese.

It began life seven centuries ago in the Italian provinces of Parma, Reggio Emilia, Modena, part of Bologna and part of Mantua. Nature blessed this zone with the most idealistic cattle grazing land to create the unique milk from the "Zone Tripica". The local cheese craftsmen took it from there, utilizing a totally natural process that has not changed for 700 years. No additives, no machinery, no gimmicks. Just sweet, fresh milk in its pristine state; the artisan's ancient skills and then nature's own good time (aged from 18 to 20 months). What you see today is just what the knights, serfs, saints and kings of old ate!

America's Test Kitchen and Cook's Illustrated have both voted igourmet.com's Parmigiano Reggiano #1 in their quest to find the best Parmesan in America today. "We preferred the igourmet regular and Vacche Rosse Parmigiano-Reggiano by a landslide, ranking them significantly higher than the other cheeses for complexity of flavor and appealing texture. And when we tasted the regular Parmigiano from igourmet against our supermarket cheeses, it was an easy winner."

White Stilton, the young, immature cousin to the world famous British blue cheese, is extra creamy and deliciously tangy but somehow unfinished all by itself - much like plain yogurt. Hence the need to introduce a fruit. Available with apricots, lemon, ginger, and several other wicked flavors. Each of these flavorful additions tames the brash White Stilton. After your first bite you will immediately recognize that the combination is a natural fit. The expert cheesemakers have added exactly the right amount of fruit such that the cheese is not overly sweet. Aged for a minimal time period, our family of flavored White Stiltons are fresh tasting products. Owing to their delicious flavors, beautiful presentations and wickedly scrumptious names, they are among the best selling blended cheeses in the U.K.

Cotechino means the winter season has arrived to Italians. Also called Zampone, it is most often produced in the Emilia-Romagna region. This traditional sausage from Italy has just recently been approved to enter the U.S. market. It is a cooked pork sausage that gets its name from the Italian word cotiche, or the cooked prosciutto rinds, that are within the sausage. This wonderful product is a seasonal item that is most often enjoyed during holidays. Made here in the U.S. to exact Italian specifications.

The history of Douwe Egberts starts in 1753, when a husband and wife opened The White Ox, a gourmet shop, in the North of Holland. Their offerings focused on coffee, tea and tobacco-- products that were imported from the Far East and traded in Amsterdam. Sales grew rapidly and soon Douwe Egberts started a wholesaling and distribution business. They built their first coffee roasting plant in 1919 and began exporting their premium quality coffee in 1930. By 1960, Douwe Egberts accounted for more than half of Dutch coffee exports. Few coffees can match the heady power and richness of this popular blend.
