In 1957, Boursin was created by French cheesemaker, Francois Boursin, from Normandy. Normandy is famous for its rich dairy heritage, along with producing such famous cheeses as camembert, pont l’eveque, and livarot. The first variety of Boursin ever created was garlic and herb, which Francois took inspiration from the traditional dish “fromage frais.” Fromage Frais (fresh cheese) is a fresh cheese passed around with a bowl of fine herbs, so each guest could customize his serving with the preferred amount of seasoning.
Historically, Boursin Garlic and Herb is the very fest fresh, flavored cheese to be sold throughout France. Not too long afterwards, Francois added a new flavor, Pepper. Shallot and Chive, and Light Garlic and Herb were later additions to this classic line-up. Today, you can find Boursin in many French kitchens, both professional and home, along with being a well-loved favorite of cheese lovers in 35 countries.

When Francois first sold his creation, he was asked to classify it for customs purposes. He chose the name "Gournay" for his cheese, naming it after the small town in France where he grew up.
Today, every package of Boursin is labeled "All Natural Gournay Cheese," which has become the standard of identity for Boursin. Interestingly, some restaurants claim to serve Boursin, but are actually offering you a lesser imitation.
