Solera is a process for aging liquids such as wine, beer, vinegar, and brandy, by fractional blending in such a way that the finished product is a mixture of ages, with the average age gradually increasing as the process continues over many years. This system is complex, requiring a great deal of work and planning, taking years to realize the benefits of using it. The Roca family of Cellers Avgvstvs Forvm have been practicing their craft for decades, in the historic vineyards of Pla de Mar, Catalonia, Spain. The skill of these artisan vintners and the unique microclimate of the terroir, have resulted in vinegars coveted by the world’s finest chefs.

For perishable orders, we line our shipping boxes with Tempguard - a unique, padded insulator made of 100% pre-consumer recycled paper material. We further control the temperature with recycled kraft paper fill and non-toxic frozen gel packs. In the summer months, we may include dry ice to ensure fresh delivery in very hot weather.
Note: Please join our efforts to be mindful of our environment and extend the life-cycle of our packaging, by recycling your shipping box, Tempguard liner, and kraft fill (all 100% curbside recyclable!). Store the gel packs in your freezer and reuse to keep your next picnic or road trip fare cool.
