This is a rich and creamy semi-hard buffalo milk cheese made on the Moianès Plateau in Catalonia, about an hour north of Barcelona. Master Cheesemaker Oriol Antúnez uses milk from local Italian buffalo farmers who settled into the nearby grassy lands of Aiguamolls de l’Empordà Natural Park. He also uses some of his own farm's goat milk to create the ideal flavor. Sarró de Búfala starts off as fruity on the palate with a lovely lactic flavor, ending in a pleasingly mild bitterness that leaves you wanting more. This gorgeous farmhouse cheese is aged for 4 months in a knotted cheesecloth or servilleta (napkin), hence its unique shape. Enjoy Sarró de Búfala as a dessert with dried figs or quince. This cheese pairs well with a fruity white.

The Montbru story began in 1980 when Oriol’s parents Pere and Imma decided to raise goats. They purchased an old farmhouse (c.1450), overlooking the village of Moià. As their herd thrived, they began making whey cheese and mató from goat milk, which was later sold at the market or to Cal Maties, the family butcher’s in the village. By 1989 the dairy was doing well and the brand was born. Today, they produce goat, sheep and now water buffalo milk cheeses in their nearby modern facility, while Oriol Antunes still uses the old farmhouse for inspiring new ideas in cheese. Buffalo milk has a lot a health benefits, it is a rich source of iron, phosphorous and Vitamin A. It also has high levels of the natural antioxidant tocopherol. It contains 58% more calcium than cow milk, 40% more protein and 43% less cholesterol than cow milk. This artisan cheese can also be enjoyed by people with an intolerance to lactose. The starter cultures transform the milk in the cheesemaking process into lactic acid resulting in a mere 0.01% of lactose presence.

What’s the best way to store my cheese?
The best way to keep cheese fresh is to store it in the vegetable crisper in your fridge. Before doing so, wrap in parchment or wax paper, then wrap loosely in plastic wrap. You can also buy our exclusive cheese storage bags, specially created to keep your cheese fresher, longer.

Unless used for cooking, we don’t recommend storing cheese in the freezer as this will alter its texture.

What is the best temperature to serve my cheese?
Remove cheese from the fridge an hour before serving, as cheese is best experienced at room temperature to enjoy the full spectrum of flavors.

How long will my cheese stay fresh in the refrigerator?
The length of time cheeses last in the fridge after opening depends largely on the type of cheese. Soft varieties tend to spoil more quickly than hard varieties. Please refer to the table below for a convenient reference:
