Award winning cheesemaker Jorge Mariano Gonzalez handcrafts and inspects every 60 pound wheel of Fiscalini Farms' bandage-wrapped raw-milk cheddar. It is quite rare for an English-style farmhouse cheddar like this to be produced in the U.S. All natural ingredients are used in the cheesemaking process. Made from Fiscalini's own milk and aged for 18 months on the property, this cheese was voted "Best Farmhouse Cheese" at the 2002 American Cheese Society Awards in Washington D.C. It is a wonderful example of the success of the artisan cheese movement in the U.S. today. Rich, buttery and sharp, Fiscalini Farmstead Cheddar is a world-class cheese.

Fiscalini Bandaged Wrapped Cheddar was awarded a Gold Medal at the 2007 World Cheese Awards in London. This makes Fiscalini the first Non-British Cheddar to win the title of "Best Cheddar."

This is a great cheddar with a sharp flavor. Just what I expected and great sliced with a cold beer or glass of red wine. If you don't like a strong cheddar it may not be for you but I love strong flavored cheeses.

This cheese had a wonderful, strong cheddar taste and was very impressive for a non-English cheddar. It was a bit crumbly (as aged cheddars tend to be), but melted well, as well as making a great accompaniment to fruit or standing up very well when served alone.

This is a "must get" whenever I treat myself to a cheese order. I love the intense flavor of this cheddar and really prefer the flakier texture. Fiscalini just has a great nutty flavor, with an earthy finish that tastes a bit like horseradish. I nibble it to the rind, which has a more mushroomy flavor.

This is a very tasty cheese. I recommend it with a light cracker and some prosciutto de parma. Using it on a salad while good seems like a waste to me. This cheese is meant to be savored. I have had very few that are better.

We enjoyed it very much. My husband didn't want to put it out for our guests. He was right. There wasn't anything left of this one. It did make a bit of a mess, though, of the cheese tray.
