With a central layer and outer covering of ash, this goat's milk tome ripens with a soft, white interior. When cut, it is reminiscent of the early morning fog. Humboldt Fog is made by Cypress Grove Chevre, which is owned and operated by mother and daughter team, Mary Keehn and Malorie McCurdy, in Humboldt County, California, among the towering redwood trees. These amazing women have an enviable passion for their work that has been rewarded by national awards, reputation, and a steadily growing business. American farmstead cheeses often command a hefty price due to their limited production, but one bite will convince you that the luxury is worth the cost. This is my and my family's absolute favorite cheese. I have now given it as a gift, and it has become the favorite cheese of all who have received it. I cannot recommend this item enough. I have it for breakfast on toast, broken into my salads, melted on grilled steak, with fruit as a snack, or plain. It's only limits are my imagination. Buy this cheese!

I was smitten at first bite. It's a little difficult to serve as the center is slightly crumbly. A small price to pay for this rich, aromatic and beatifully balanced goat cheese. It may be a little pricey but, I will treat myself occasionally. The producing artisans should be proud.

Had this for the first time, and just expected an ash coated goat cheese. Was very pleased to see this also had an almost brie-like ripeness under the rind, with a more standard goat cheese texture in the middle. Ash is a nice accent too. Buying more as soon as its back in stock!

Last month, my book club ladies sampled various cheeses and wine at a Seattle restaurant. We picked this cheese as our number one choice. I am ordering more for this monthes book club. I generally prefer goat and sheep cheese because of the lower cholesterol but Humbolt Fog is so delicious I just had to buy some.

It's hard to describe because it has a firm exterior but a creamy soft interior. There's a dark line in the middle which I understand is fruit ash. It sounds odd, but the ash enhances the creamy, sweet flavor making it taste even better. The contrast between the inside and outside of the cheese is intruiging and makes the cheese very flexible.

I tried it in sandwiches and found you need very little of it to make a good sandwich if you add something tart such as Branston's pickle or even a slice of tomato. It worked best for me on crackers especially cracked pepper water biscuits.

This is quite simply the best goat cheese in the world. Period.

Utterly unbelievable with walnuts (especially the caramelized Spanish ones: "nueces acaramelades"), a good strong honey (like chestnut honey or even leatherwood honey if you're really bold) and good oat crackers.

I first had this cheese at Slightly North of Broad in Charleston, SC. I had to search it out. I have served it at several cocktail parties and been asked for the name and how to find it. It is one of the best cheeses you will find anywhere
