Bit smelly but supurb taste

I bought this cheese for the oozing consistency but it had not reached that point. The taste was still good. Reminded me of Port Salut.
This is made in our town of Longmont where it is featured in our local cheese import shop. It is the perfect texture and taste for appetizers, both hot and cold, or after a light meal.

This cheese is pretty stinky, but inside is a flavorful, creamy center. My favorite part is the cute sticker on the front that tells you how the cheese will be, depending on how firm/runny/stinky you like it! It gives a date that tells you how the cheese will be after a certain period of weeks, so you can enjoy at the perfect state of ripeness. I wish more soft cheese/camembert makers would do this, as it really allows you to enjoy the product at your favorite stage of ripeness.
